Keto, Vegan and Gluten Free Chili Can Be Awesome

I don't know about you but I love chili. That being said, I want to live better and eat healthier. But my goal is to eat whatever I want! Sounds crazy, right? Even if I have to spend weeks creating a recipe that gives me exactly what I crave. I will find a way to satiate my hunger for delicious and low-key nutritious foods. So my recipes reflect that.

We all know about "cheat meals". I get it! I'm not what one would consider a "rule follower". But a good cheat meal doesn't have to derail your progress! Think about it like this. Why cheat when you could have your partner dress up in a wig and speak with an accent. It's still fun and exciting! Your "cheat meals" can be no cheat at all and still feel like it! Who doesn't want to feel a little naughty from time to time? You'll find this attitude has a common thread throughout my recipes.

Switch it up with some plant based food!

I'm not being overly dramatic when I say we have been missing out on what a few plant based meals a week can do for our overall health. Eating a plant based diet a few times a week has been shown to lower cholesterol, enhance your mood and bring a zip back into your step. By its very nature, plant based foods break down quickly and efficiently, resulting in less bloating and the uncomfortable feeling of being overly fed. That including proper over all nutrition can help to regulate your gut-biom. We've all heard by now, what you eat is really important! So why not try eat healthier, even for only a few meals a week. We all have to start somewhere. Not to mention using whole foods is a great way to spark creativity in the kitchen! In fact that is exactly how this Keto, Vegan & Gluten Free Chili recipe came to be!

Are you ready to make possibly the most delicious and nutritious Chili in your entire life?

(Okay, that was a little dramatic. My apologies. I'm just so excited to share this recipe with you all!)

First things first. Get your mise en place. Frenchy speak for getting your ingredients into place. What you're going to need is:

3 Chipotle Peppers in Adobo

8 cups low sodium vegetable broth

1½ Cups Walnuts

1 Cup Almonds

1 Cup Cashews

2 tbsp Tomato Paste

1 large Carrot

2 Shallots

6 Cloves Garlic

2 Stalks Celery

1 Serrano Pepper

1 tbsp Vegetable Paste

3 tbsp Coconut Oil

1 tbsp Chili Powder

2 tbsp Salt

1 tbsp Onion Powder

1 tbsp Garlic Powder

½ tbsp Cumin

½ tsp Cinnamon

½ tbsp Sumac

1 tbsp Cocoa Powder

2 tsp Espresso Powder

1 ½ tsp Black Pepper

¼ tsp MSG (optional)


Method:In a Dutch oven, heat coconut oil over medium heat. Add finely chopped shallots, garlic, celery, carrot, and serrano pepper. Sauté until the onions are translucent. Stir in tomato paste and cook for 1 minute. Add your spices in one at a time.Blooming the spices for 1 minute.

Add walnuts and mix well to coat with the aromatics. Pour in vegetable broth and add chipotle peppers (finely minced). Simmer over low heat for 2 hours. After 2 hours, use a stick blender to partially blend the mixture, ensuring not to completely puree the walnuts. Add roughly chopped almonds and cashews to the pot. Simmer for an additional 1 hour. Adjust seasoning to taste. Serve hot, garnished with avocado slices, chopped scallions, and a squeeze of lime juice. Enjoy your flavorful VGK Chili!
