Shrimp and Asparagus with a Baja Buerre Blanc

Baja Buerre Blanc is an absolute revelation!
Conventional French cuisine is terrific. Let's just establish that right out of the gate. But... More often than not, traditional French cuisine lacks some je ne sais pas. Let me American that for you. In my opinion, I know exactly what it lacks, heat! Come on Pierre. Throw some chilies in that dish! For cripes sake! Y'all are so worldly, use some products from around the world! Okay, that's enough shots at the French folks. Maybe we'll get back to that later.
I guess i'm supposed to drone on and on now. Telling you stories, making sure to leave room for all the advertisers. I do need the advertisers. That much is true! But what I really want is for people endeavoring to get healthier to have access to amazing recipes. I don't know about you but great food is half the battle. So just this once, we're going to keep it brief and get right to it!
So what your're going to need for this recipe is-
1 Medium Shallot, diced fine
1 Serrano Diced fine
½ cup White Wine
¼ cup Lemon Juice
2 tbs heavy cream
1 Cup Butter
½ tsp Chipotle Powder
Salt to Taste
5 Shrimp
½ Bunch of Asparagus
Salt
2tbs Mixed Serrano, Shallot and Lemon Zest
Make the dang sauce! Take your time. Low and slow.
In a shallow, thic bottomed ☺️ pan, reduce wine, lemon juice shallot and serrano to a third. Add in a splash of cream and slowly stir in COLD butter. If it's to hot, it'll split. So Don't Do That. Strain and keep warm
In a large skillet, toss in 2 tbs butter, shallot, lemon zest and serrano. Add the Asparagus, flip. Add shrimp. Remove asparagus then flip the shrimp. Finished in no more than 7 minutes. Don't over cook the shrimp. Or do. It doesn't matter. The sauce covers a world of hurt!

I'm big fan of keeping things simple. I wouldn't share this recipe if I wasn't sure most could pull it off with ease. I'm not going to add in all the carb counts. Here's the thing. The more you fixate on counting carbs. The more impossible it can feel. Do away with what you know is bad. Replace what you can. And most of all, Be Kind to Yourself!
