I'm a lover of wraps! This Chicken, Bacon Caesar Wrap hits me right in the feels.
I remember clearly, sitting down at a lunch spot with my mom in our little town having my very first Chicken-Bacon-Caesar Wrap. It was the late 90's. Food culture was really beginning to hit the mainstream and restaurants of all types were experimenting with innovative ways to eat our favorite foods. From the first bite, I was shook. I absolutely loved it. Till this day when I see it on a menu, I'm inclined to order it.
My mom and I were "foodies" far before that was commonplace. Always creating fun and exciting dishes to show off. Trying new things at one of the seemingly endless restaurants popping up all over the place was always something I looked forward to. We indulged whenever we could. If I'm being honest, those times weren't all unicorns and rainbows in our home. The struggles of post-adolescence, navigating illness and loss; my mom always knew how to inject some beauty, magic and love into our lives. The magic of those moments remain with me today. For her I am forever grateful. What were we talking about again? Oh yeah, wraps.
Chicken bacon Caesar wraps are an absolute delight, but those of us who follow a low-carb lifestyle often miss out on the enjoyment. worse than that, the options given lack flavor, texture and imagination. However, it's time to change that! By making a few simple adjustments, we can create a low-carb version of this incredible wrap that is equally delicious. Instead of using traditional wraps, we can create for ourselves a healthy and low carb alternative. The chicken and bacon are cooked to perfection, adding a deep umami flavor to the dish. Topped with a creamy and tangy Caesar dressing hack, packed with healthy fats and flavor. This low-carb chicken bacon Caesar wrap is a fantastic option for those watching their carbohydrate intake. Don't let your dietary restrictions hold you back from enjoying this mouthwatering treat – embrace the low-carb version and savor every bite!
What you're going to need for this recipe:
Low-Carb Spinach Tortilla
2 cups Tender Baby Spinach
3 Medium Eggs
1/2 cup Shredded Oaxaca Cheese (I know I said parm in the video. I misspoke)
2 tbs Ground Flaxseed
1.5 tsp Salt
2 tbs Olive Oil
Caesar Dressing
3/4 Cup of Cultured Sour Cream
2 tbs Greek Freak (Spiceology. Link below)
1 to 1.5 Lemon,Juiced & Zested
6 Anchovies Preserved in Oil
3 tbs Olive Oil
Salt to Taste
Chicken & Bacon
1 Chicken Breast Cut into 1/2 cubes
4 Slices of Thiccc Cut Bacon, Cut into Batons
1 Tbs of Cultured Butter (or our bone marrow butter)
1/2 Lemon, Juiced and Zested
2 tbs of Neutral Oil
First, place all the ingredient for the wrap in a High Powered Blender or food processor. Blend until homogeneous. You're looking for the consistency of a crepe. If it's a thick like batter, thin it with water, 1 tablespoon at a time. In a large skillet, pour half the contents into a preheated pan, set on medium. Cook covered for 3 minutes. Flip carefully and cook for 2 minutes. Repeat for the second large wrapper. Set aside on lightly oiled parchment paper. Do Not Stack without the parchment in place. They will stick, so be careful.
For the dressing, place all of the ingredients in a High Powered Blender and blend until homogeneous. Salt to Taste. Bam! Done!
As you can see, this recipe is pretty easy and straight forward! You can do this, no problem.
In a pan, fry off bacon and cook to your preferred doneness. Reserve 2 tbs of the bacon fat, discarding the rest. I usually use a mesh strainer to accomplish the task. A paper-towel will work for this but the results aren't the best.
Get your pan hot again, adding the neutral oil of your choosing. I would avoid Olive Oil for this task, if it's too hot it will bitter and potentially downgrade the dish. Add back in your bacon fat and place you chicken in. Hit it with some salt and pan fry until golden brown. Reduce the heat and throw in a pad of butter. Once the chicken is thoroughly coated, pour in your lemon juice and lemon zest. You could add fresh herbs at this point as well. I prefer to keep the flavor profile we have but you do you!
Time to assemble! Now you're getting excited! It's like any other wrapper or tortilla. This wrap is pliable and easy to roll. One caviat, if it's too thick it may well crack but that's not the end of the world. It's gonna be just fine. Add all of the ingredients in a line like you are rolling a burrito. Sauce it up to your desire!
