Keto Pizza with Romesco Sauce
A Keto Crust that doesn't taste like chicken/eggs or something weird? I'm in!

Pizza is for winners! Or for anybody that Likes food and wants food to be good.
Pizza parties were a highlight of my youth. At the end of every wrestling season we would gather at a joint called Poker Pete's. It had all the trappings of an amazing 80's Pizza joint. Arcade games, Foosball tables, the smell of stale beer, syrupy fountain machine and pizza! Something about the combination was intoxicating. I loved it. As a matter of fact, I'm convinced America's Love Affair with Pizza was born out of places like these! I know my own adoration for this culinary achievement was.
Now I'm not going to bore you with the history of pizza nor am I going to argue what toppings are acceptable. It's the individual's choice to do whatever they want with their creations. Come at me bro. I'll die on that hill! But I digress.

What You're Going to need:
Keto Pizza! Not some floppy, Flavorless crust either. Delicious, crispy and a nice chew.
Keto Pizza Crust
1 cup Almond flour, sifted
3 medium Eggs Beaten Well
½ cup Shredded Parmesan
¾ tbs Fine Sea Salt
Mix to combine. pour into heavy bottom skillet spread and shake vigorously until it covers the pan put into oven preheated to 400⁰F Bake 6 mins, remove and top to your liking bake another 7-10 minutes
Don't Forget the Romesco!
What you're going to need for this amazing sauce is:
4 Bell Peppers
1 Red Jalapeno or Fresno Chili.
1 Head of Garlic
3 cups of Beef or Chicken Broth
1/4 cup Olive Oil
Salt and pepper to taste.
Salt and Roast those Peppers and Garlic in the oven set at 400 degrees For 12 minutes. Don't be afraid of getting some color on them! Color is flavor. Remove from the oven and add all the ingredients to a heavy bottomed pan. Clover with stock and simmer for 10 minutes. With a stick blender, blend vigorously.(You can use a food processor or Blender if you like) At this point you can add any seasonings you like. I'm just using salt and pepper. The roasted garlic and peppers do what I need. I'll just keep it simple!
Now that we've gotten to this point. It's time to assemble. Don't be shy! Load it up! Be adventurous! Let's be honest. Pizza is fabulous and not eating because your on the Keto Diet is just plain old self abuse! Here's the thing. You can eat whatever you want! It's true. Where there is the will, there is a way! But I could use the same statement and preclude a different meaning entirely. You can eat whatever you want... Who's stopping you? There's always a choice. Choosing to be healthy and happy is up to you. My mamma always said "make good choices, son". I intend on doing just that. You can join me if you want!
