How Long has it been since you enjoyed Fried Rice? Let's change that!

I'm almost positive every small city has a Chinese American place called "Chinese Gardens" or "Chan's". Traveling around the country my fair share, I'd swear to have seen one or both of those places were in every town under 50,000 in population. That isn't by any means a slight against these establishments! There's something these little joints do so well. Fried Rice! Savory, salty and mildly sweet with the ever present flavor of MSG lending a deep umami to the starchy and wok fried masterpiece. When in doubt, Chinese American it is! My eyes were always bigger than my stomach so like most people i'd have Chinese leftovers the next day. I loved experimenting with fried rice. It was the perfect canvas for a young culinary artist. It is certainly one of the foods I miss most since I jumped into the Keto Lifestyle. But if you know me, I will not be deterred from my favorite foods! I shall overcome all obstacles and work until I can have what I want!

We should talk about the elephant in the room. Rice is not low-carb or keto. I hope that goes without saying but perhaps your're new on the scene. If that's the case, I have some news for you... Rice is no longer on the menu. In its stead my nemesis has entered the arena. Riced Cauliflower. I wish I had more nice things to say about the stuff. Yes it is healthy. Yes it is versatile. Yes it's possible to do some truly incredible with this ubiquitous cruciferous ingredient. Unfortunately, I have had it made for me so poorly, so often that I often avoid it like the self check line at the grocery store. I just worry something is going to go wrong. That being said, I believe I cracked the code!

There is a way to create a delicious and nutritious meal! And it starts with doing something antithetical to every well prepared vegetable I have ever eaten and enjoyed. Cook until it's dry! I'm completely serious here. You cook out the flavor of cauliflower and replace it with something delicious. In this case we're going to infuse the floral flavor of green tea! Jasmine rice is used often so the green tea acts as a great addition to get you that unmistakable flavor. Tell you what. Let this recipe for Keto Fried Rice be you guide on this journey. What you're going to need for this recipe:

  • 2 cups Riced Cauliflower

  • 5 16-20 Shrimp, Raw Peeled and De-veined

  • 2 Large Eggs Well Beaten

  • 1 Medium Shallot, Sliced Thin

  • 5 Green Onions Sliced Thin (Separate the Whites)

  • 5 Cloves of Garlic, Sliced Thin

  • 2 inch Nob of Ginger, Grated

  • 2 tbs Strongly Brewed Green Tea

  • 1 Red Fresno (or 2-3 Thai Chilies), Sliced Thin

  • 3 tbs Coconut Oil

  • 2 tbs Tamari

  • 1 Tbs Finely Diced Preserved Lemon (optional)

  • Salt and Pepper to Taste

Okay let's get this party started. In a preheated; large frying pan or wok dump in your defrosted riced cauliflower and green tea. You are going to cook that at medium heat. Keep it moving. Color is flavor but that will come later. Once the individual grains of riced cauliflower are no longer sticking together and moving easily around the pan. Remove and set aside.

This last part goes rather quickly so be ready! Wipe out you pan (Carefully! It's hot as a pistol at the Okay Corral). Add in your oil and when it's shimmering in the pan, add in your shallots; chilies and green onion whites. Saute that for about 2 minutes. Add in your cut green beans or preferred delicious green thing. Once the green is vibrant in color, add back in your riced cauliflower. Saute for 1-2 minutes then add in your grated ginger and preserved lemon. At this point you add in a pinch of salt (perhaps some of that crystallized umamai, if your willing) and Tamari. Pour in the beaten eggs and mix thoroughly. As soon as the egg curds have set, place in your shrimp! Get to tossing. Keep everything moving. The entire process should have taken little more than 10 minutes. That's fast! This dish is absolutely Brimming with Healthy Fats and Protein. You really can't ask for better weeknight meals than this.
