What If I said, "Nachos Can Save The World". Then I Said "Cottage Cheese Queso Is The Future". Would That Be Weird?

Sometimes I will simply walk in the general direction of certain foods and immediately think how I can have that on my low-carb journey. Nachos folks. Nachos get me almost every time. Not that store bought junk either. Real deal Queso with some delectable toppings. Now we could do any run-of-the-mill queso, sure. But I'm thinking if we can get the healthy fats and proteins in larger quantity with Cotaage Cheese, then why not? But first we need the history of nachos.

Just kidding. We aren't going down that rabbit hole. Who knows what could be down there! What I will say is nachos are awesome and everyone, no matter their diet should at least endeavor to to enjoy them! Nachos shouldn't just relegated to bar menus and ball parks. They should grace the tabletops of people all around the globe. Yes, I do think Nachos can bring the world together... Too dramatic? Okay, nachos are good. You should eat them.

If you're following a low-carb/keto lifestyle you already know that's easier said than done. I'm sure someone out there has a "keto Nacho recipe" that's just all of the toppings, held in place on a leaf of lettuce or something. I wish that was an absurd statement but if you've been doing this for any length of time, you know exactly what I am talking about.

Why Cottage cheese, you ask? Well, I'm glad you said something! Cottage cheese has 1.5x more protein than other cheeses and more potassium. That should tell you right there what you need to know. If you want to know more... Google it after you make this. Come on! Live life on the edge a little bit!

What you're going to need for this recipe:

Queso

  • 2 cups Cottage Cheese

  • 1/2 cup Cream

  • 1/4 cup Jack Cheese Shredded

  • 2 tbs Butter

  • 1 tbs Sazon Con Culantro y Achiote

Tortilla Chips

  • 4 Medium Net 0 Carb Tortillas

  • Avocado Oil Spray

  • Fine Sea Salt

The very first thing you have to do is reheat your oven to 250d Fahrenheit. Slice those tortillas in to little chip triangles. Place them on a large sheet pan, keeping space between them and put them into the oven for 10 minutes. Remove from the oven and flip each chip. Spray it sparingly with your Avocado Oil Spray and salt to your desired saltiness. I'm a salty fellow so I get pretty aggressive. And I like salty chips too. Keep an weathered eye on those crunchy triangles. It took 35 minutes in my oven but it may take more or less in your oven.

This Queso is one of the simplest cheese sauces you will ever encounter! Grab your favorite high speed blender. I love my Ninja Blender. We've been through some stuff together. I'm a loyal kind of guy. I own her my allegiance. Poor 2 cups of your cottage cheese in blender and blend on medium to start. In a heavy bottom sauce pan (that thiccc bottom can make or break sauces) place Cream and butter. When the mixture is steaming slightly, add your seasoning. Remove from heat and pour into the measuring cup. When you're ready, drizzle in the mixture to your cottage cheese. After 1-2 minutes pour back into sauce pan and slowly add in the cheese. Be careful now. If you get to aggressive with the heat it will split. If by some happenstance it does, put back into blender and blend until smooth. The entire sauce was done in under 10 minutes!
